Greenlandic cuisine – Tørret Fisk

Tørret Fisk is a traditional dish that captures the essence of Nordic cuisine. The fish is carefully dried to concentrate its flavors and create a unique texture. Served with a selection of fresh herbs and spices, this dish offers a harmonious blend of salty, spicy, and fresh notes — a true delight for lovers of authentic Scandinavian cooking.

Ingredients for 4 servings

Main course

  • 800 g cod, cut into 4 portions
  • 100 g salt
  • 1 tsp freshly ground pepper
  • 1 bunch dill, finely chopped
  • 1 lemon, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, finely chopped

Preparation

  1. Rinse the cod thoroughly under cold water and pat dry. Cut into 4 equal portions.
  2. Rub the fish generously with salt and place it in a bowl. Cover with plastic wrap and refrigerate for 24 hours.
  3. After 24 hours, remove the fish from the refrigerator and rinse off the excess salt. Pat dry again.
  4. Season the fish with freshly ground pepper and drizzle with olive oil.
  5. Sprinkle the chopped garlic and dill over the fish and place the lemon slices on top.
  6. Place the fish on a baking tray lined with parchment paper and bake in a preheated oven at 180°C for 30 minutes, until cooked through and lightly browned.
